Efco Muffins


Oatmeal Muffins

                                                                            Small Batch         Large Batch

Ingredients:

#316 EFCO Basic Muffin Mix                        10 lbs.                   50 lbs.

Water                                                                   5 lbs.                    25 lbs.

Quaker Oats                                                        2 lbs.                    10 lbs.

Cinnamon                                                           2 oz.                      10 oz.

Raisins                                                                 2 lbs.                     10 lbs.

Procedure:

Mix water and EFCO Basic Muffin Mix in large bowl at low speed for 1 minute

Scrape sides of bowl.

Mix 2 minutes at medium speed.

Add Quaker Oats, Cinnamon, and Raisins and fold in until well blended.

Bake at 375 degrees F for 25 to 30 minutes.

Sprinkle Quaker Oats on top of muffins (optional).

ENJOY!




Gourmet Filled Muffins

Ingredients:

#316 EFCO New England Muffin Mix

Water

Your favorite EFCO Gourmet Filling such as:

#132 EFCO Gourmet Banana Crème

#3196 EFCO Gourmet Bavarian

#133 EFCO Gourmet Coconut Crème

#3720 EFCO Gourmet French Vanilla

Procedure:

Mix #316 EFCO New England Muffin Mix according to bag directions.

Fill Muffin pans ¾ full of batter.

Fill the center of muffins with 1 oz. of your favorite EFCO Gourmet Filling.

Top with streusel or granulated sugar.

Bake according to bag directions.

Fruit Bran Muffins

Ingredients:

#318 EFCO New England Bran Muffin Mix                   10 lbs.                       50 lbs.

Water (variable)                                                               5 lbs. 8 oz. to 6 lbs.     25 lbs.

Soaked Raisins                                                                   2 lbs.                         10 lbs.

Apple (finely chopped)                                                       2 lbs.                         10 lbs.

Mixed candied fruit                                                              2 lbs.                          10 lbs.

Procedure:

Mix water and EFCO mix at low speed for 1 minute.

Scrape sides of bowl.

Mix at low speed for 1 minute.

Fold in raisins, apple and candied fruit.

Fill muffin tins ¾ full.

Bake at 375 degrees F for 25 to 30 minutes.

Blueberry Bran Muffins

Blueberries                                                                        3 lbs.                           15 lbs.

Procedure:

Mix water and EFCO Bran Muffin Mix at low speed for 1 minute.

Scrape sides of bowl.

Mix at low speed for 1 minute.

Fold in blueberries.

Fill muffin tins ¾ full.

Bake at 375 degrees F for 25 to 30 minutes.

Raisin Bran Muffins

Ripe Bananas                                                        3 lbs.                                       15 lbs.

Banana Flavor                                                       1 oz.                                          5 oz.

Chopped Walnuts (mix into batter)                 1 lb.                                         5 lbs.

Procedure:

Mix water and EFCO Basic Muffin Mix in large bowl at low speed for 1 minute.

Scrape sides of bowl.

Mix 2 minutes at medium speed.

Add mashed ripe bananas, Banana flavor and Chopped Walnuts and fold in until well blended.

Bake at 375 degrees F for 25 to 30 minutes.

Mixing Time & Speed:                                                      1 minute at lowspeed;

                                                                                                           scrape bowl

                                                                                           2 minutes at medium speed

Batter Temperature:                                                                      70° – 72°F

Baking Temperature:                                                                        375°F

Baking Time:                                                                                 25 – 30 minutes

Note: If adding fruit, nuts, etc., these items should be added to prepared batter and folded in.

Procedure:

Mix water and EFCO Bran Muffin Mix at low speed for 1 minute.

Scrape sides of bowl.

Mix at low speed for 1 minute.

Fold in apples, walnuts and cinnamon.

Fill muffin tins ¾ full.

Bake at 375 degrees F for 25 to 30 minutes.

Pumpkin Puree                                                      1 lb.                              10 lbs.

Pumpkin Pie Spice                                            To taste                          To taste

Raisins (optional)                                                 1 lb.                               10 lbs.

Procedure:

Mix water and EFCO Basic Muffin Mix in large bowl at low speed for 1 minute.

Scrape sides of bowl.

Mix 2 minutes at medium speed.

Add Pumpkin Puree, Pumpkin Pie Spice and Raisins (optional) and fold in until well blended.

Bake at 375 degrees F for 25 to 30 minutes.
