Pumpkin Muffins

Ingredients:

#316 EFCO Basic Muffin Mix                             5 lbs.                           50 lbs.

Water                                                                     1 lb. 4 oz.                     12 lbs. 8 oz.

Pumpkin Puree                                                      1 lb.                              10 lbs.

Pumpkin Pie Spice                                            To taste                          To taste

Raisins (optional)                                                 1 lb.                               10 lbs.

Procedure:

Mix water and EFCO Basic Muffin Mix in large bowl at low speed for 1 minute.

Scrape sides of bowl.

Mix 2 minutes at medium speed.

Add Pumpkin Puree, Pumpkin Pie Spice and Raisins (optional) and fold in until well blended.

Bake at 375 degrees F for 25 to 30 minutes.
